Executive Chef Stephen Gustard on Jamie Oliver’s Food Revolution

This past fall The Greenbrier Sporting Club’s culinary team headed to Huntington, WV to participate in Jamie Oliver’s Food Revolution. We recently sat down with Executive Chef, Stephen Gustard to get a an insider’s point of view from this exciting event in culinary history.

Watch the video below from Jamie Oliver’s Food Revolution! For more information visit our January 4th blog post: HERE

Member Dashes for Cash at GEHS

Wednesday night was very exciting during the girl’s basketball game at Greenbrier East High School. Not only did the Lady Spartans crush the Capital Cougars from Charleston, WV, but our very own Vice President and General Manager Larry Klein purchased the winning ticket for “Dash for Cash”. (The money from ticket sales goes to support the GEHS sports program.)

Normally the winners choose a kid to dash for them, Larry decided to choose Sporting Club Member Byron Rausenberger. He had 15 seconds to grab as much of the $2,000 that was littering the gym floor as he could. He did a great slide and collected $147 in singles from the Spartan floor. Reportedly there were a couple larger bills, but alas he did not find them. (The $147 won that night was happily donated to the Greenbrier Humane Society.)

We hope you enjoy this short video of Byron’s Dash for Cash. It’s a stellar slide!

Corie Lynch on Casino Construction

Corie Lynch, The Greenbrier Sporting Club’s winter intern, presents the fourth installment of her series of “Reasons I Love The Greenbrier…And So Should You.”

The activities at The Greenbrier are exciting because they are likely something the majority of us don’t do on a regular basis in our non-vacationing lives. Kayaking, rock climbing, fly-fishing, off road driving, and horseback riding are just some of the many outdoor activities available to members. But what does one do at night when all the kids are (supposed to be) fast asleep in their rooms? The solution is now obvious with The Tavern Casino, currently open, and The Casino at The Greenbrier almost ready to open its doors in Spring 2010. Now, there’s always a slew of leisure activities for those that would prefer to take it slow instead of getting caught up in all the excitement of gaming at The Greenbrier, but for everyone else the new entertainment complex at The Greenbrier will open a whole new world of possibilities – dining, live entertainment, and even more retail shopping. Observing the construction progress of the facility has been entertainment in itself.

Here are some pictures of the entire process – from the groundbreaking ceremony to the sealing of the roof on the underground building. Enjoy the pictures and remember – you only have a few more months to perfect your blackjack game!

Member’s Eldorado Wins Second Place at Shanghai Parade

Lewisburg’s Shanghai Parade, held every year along Washington Street on New Year’s Day, dates back almost 100 years. With no real theme, the parade is typically open to everyone and anyone who wishes to join in on the fun. This year, Greenbrier Sporting Club member Roland Young decided to take his 1954 Cadillac Eldorado for a spin down the parade route. In 1954, the Eldorado was in its second year of production and Mr. Young’s is a prime example of classic American automobile design. With a gorgeous candy apple red finish, the car finished second in the “Antique Car Competition” at the parade. Riding along with Mr. Young was Lewisburg resident and Sporting Club member Kathryn Tuckwiller and Sporting Club Director of Real Estate Suzanne Horst, along with Young’s dog James and out-of-town guests from Michigan.

Corie Lynch Explores The Greenbrier’s Not-So Secret Bunker

Corie Lynch, The Greenbrier Sporting Club’s winter intern, presents the third installment of her series of “Reasons I Love The Greenbrier…And So Should You.”

The first time I toured The Greenbrier’s bunker was in 1998, but I was 9 years old and Sesame Street was my favorite show.  Needless to say, I didn’t exactly grasp the significance of the bunker and the depth (no pun intended) it added to The Greenbrier’s history.  It was built in the 1950s as an emergency relocation center for the U.S. congress in the event of a national crisis. It was kept classified for more than 30 years, but now the vault door is open and the bunker makes a great tour. The other day I took the 90 minute tour with a lovely couple from New England and was surprised at how much I didn’t know about the bunker. For example, it cost $14 million to build, and some places are 60 feet below the ground. President Eisenhower even scheduled visits to The Greenbrier to secretly talk about the production of the bunker.  And all this time I thought President Eisenhower simply enjoyed relaxing by the mountains and playing a few rounds of golf.  So, if you are looking for an interesting, 3-D history lesson, the bunker tour is the place to get your fill.  Why settle for reading about it when you can experience this national treasure yourself?

GSC Chefs Team Up With Jamie Oliver for Food Revolution

JamieandGSCteam_500

A team of chefs from The Greenbrier Sporting Club were honored with an invitation to attend this past fall’s Food Revolution street fair and concert in Huntington, W.Va., hosted by British chef Jamie Oliver. Oliver and his producers, who are filming an ABC television series in Huntington that focuses on healthy eating habits, hand-picked the vendors based on their efforts to bring healthy foods into their kitchens. The food fair was part of a day-long event that also featured a free performance from country music stars Rascal Flatts.

Executive Chef Stephen Gustard, Executive Pastry Chef Amy Mills, Summit Lead Chef Drew Robinson, Wayne Bostic, Susie Callison, Olivia Meyers and Summit Dining Manager Clay Elkins were all on hand to feed hundreds of Tri-State area residents who came out for the festival.

The Sporting Club’s culinary team wowed festival goers with a local Greenbrier Valley menu, including: Almost Heaven Smoked Chicken with a Half Mountain Farms Celeriac BBQ sauce, West Farms’ Spaghetti Squash, and Johnny Spangler’s Pea Shoots. Executive Pastry Chef Amy Mills delighted the masses with Morgan Orchard Apple Cake with Apple Jack Sauce and Oatmeal Streusel, as well as a Mulled Apple Cider.

Oliver’s main goal with the television series, which will air sometime in 2010, is to examine what kids are eating at school and what families are serving in their own kitchens. According to Oliver’s website, his big challenge is to get a whole community to rally together and be able to cook fresh ingredients.

“We all need to rediscover the sense of pride, satisfaction and fun you can get from cooking for the people you love,” says Oliver. “I want this experience to be a celebration of what we can achieve when people come together. I want to prove that turning around the epidemic of obesity and bad health doesn’t have to be boring or dull. Wonderful stories will unfold in Huntington. I think their people will inspire the rest of the States to reconnect with food and get cooking too.”

Oliver spent about fifteen minutes at The Sporting Club booth. Surrounded by a throng of producers, news outlets, and fans, Oliver spoke with Gustard about The Sporting Club’s use of wholesome, local food products and praised the chefs for doing their part in bringing people back to the kitchen table.

“It is such a blessing to have a celebrity chef promoting a healthier and organic culinary mind set” Gustard says. “I strongly believe in what he is doing and glad that The Greenbrier Sporting Club has allowed me to have those same virtues by using local produce, meats, and cheeses. I do hope that this show will open people’s eyes to eating a well balanced diet that includes local and organic products.”

Towards the end of the filmed segment on The Sporting Club, Oliver directed his producers to plate a dish of the chef’s creation for a photograph. Executive Chef Gustard also submitted some of his recipes the producers, and spoke at length about his own philosophy of food. Oliver’s food magazine, Jamie, plans to do a spread on the event in one of their upcoming issues, which will feature Sporting Club menu items presented during Jamie’s Food Revolution.
