Greenbrier Medical Institute Rendering

On a beautiful afternoon in the Allegheny Mountains this past summer, Jim Justice, Chairman and CEO of The Greenbrier Hotel Corporation, announced the development of a forward-thinking medical initiative, along with world-renowned physicians Dr. James Andrews, Michael Immel and lauded healthcare developer Jack T. Diamond.

For Justice, who bought the 6,500-acre resort in 2009, the decision was practical and emotional. “Over 200 years ago, people came here to improve their health; soaking in the sulphur water, using hollowed-out trees for bathtubs. That’s how The Greenbrier was born,” said Justice. “Now, we are redefining healthcare with the expertise of these highly regarded professionals, a state-of-the-art medical facility and forum for research and education. And we are doing it right here in West Virginia. How exciting is that?”

While the institute will be built in phases, the initial stages are estimated at $250 million. Phase I will include five buildings: a relocated and expanded executive health Greenbrier Clinic, a Jim Andrews sports medicine center, a cosmetic surgery and lifestyle enhancement academy, a sports performance and training facility and a boutique hotel with 20 VIP suites.

Greenbrier Medical Institute Rendering

The concept for this cutting-edge endeavor was developed by Andrews and Diamond, who envisioned a world-class medical complex which would revolutionize healthcare. In addition, Dr. E. Gaylon McCollough, an internationally recognized surgeon and teacher in the cosmetic surgery field, has joined the team. Their goal was to establish a medical mecca with numerous components including sports performance, wellness, research, product development, education, cosmetic surgery, preventive care and other specialties. At the same time, they wanted a place that would attract the best physicians and healthcare professionals in the world, in turn creating a think tank of global proportions. Throughout their discussions, locations such as London, England, Riyadh, Saudi Arabia, Brasilia, Brazil and Seoul, South Korea were considered. However, once the idea was presented to Justice, the concept became a reality with its home to be White Sulphur Springs, West Virginia.

Greenbrier Medical Institute Rendering

The Greenbrier Medical Institute complex, designed by architect Willie Stokes, will feature classic Georgian architecture similar to the resort’s façade. A replica of the Springhouse, the site of the property’s sulphur springs, will be incorporated into the facility. The Institute will include guest suites for patients and their families. Diamond and his partner Mark E. Krohn are leading the development of this extensive project.

Greenbrier Medical Institute Site Plan Rendering

A team of chefs from The Greenbrier Sporting Club were honored with an invitation to attend this past fall’s Food Revolution street fair and concert in Huntington, W.Va., hosted by British chef Jamie Oliver. Oliver and his producers, who are filming an ABC television series in Huntington that focuses on healthy eating habits, hand-picked the vendors based on their efforts to bring healthy foods into their kitchens. The food fair was part of a day-long event that also featured a free performance from country music stars Rascal Flatts.

Executive Chef Stephen Gustard, Executive Pastry Chef Amy Mills, Summit Lead Chef Drew Robinson, Wayne Bostic, Susie Callison, Olivia Meyers and Summit Dining Manager Clay Elkins were all on hand to feed hundreds of Tri-State area residents who came out for the festival.

The Sporting Club’s culinary team wowed festival goers with a local Greenbrier Valley menu, including: Almost Heaven Smoked Chicken with a Half Mountain Farms Celeriac BBQ sauce, West Farms’ Spaghetti Squash, and Johnny Spangler’s Pea Shoots. Executive Pastry Chef Amy Mills delighted the masses with Morgan Orchard Apple Cake with Apple Jack Sauce and Oatmeal Streusel, as well as a Mulled Apple Cider.

Oliver’s main goal with the television series, which will air sometime in 2010, is to examine what kids are eating at school and what families are serving in their own kitchens. According to Oliver’s website, his big challenge is to get a whole community to rally together and be able to cook fresh ingredients.

“We all need to rediscover the sense of pride, satisfaction and fun you can get from cooking for the people you love,” says Oliver. “I want this experience to be a celebration of what we can achieve when people come together. I want to prove that turning around the epidemic of obesity and bad health doesn’t have to be boring or dull. Wonderful stories will unfold in Huntington. I think their people will inspire the rest of the States to reconnect with food and get cooking too.”

Oliver spent about fifteen minutes at The Sporting Club booth. Surrounded by a throng of producers, news outlets, and fans, Oliver spoke with Gustard about The Sporting Club’s use of wholesome, local food products and praised the chefs for doing their part in bringing people back to the kitchen table.

“It is such a blessing to have a celebrity chef promoting a healthier and organic culinary mind set” Gustard says. “I strongly believe in what he is doing and glad that The Greenbrier Sporting Club has allowed me to have those same virtues by using local produce, meats, and cheeses. I do hope that this show will open people’s eyes to eating a well balanced diet that includes local and organic products.”

Towards the end of the filmed segment on The Sporting Club, Oliver directed his producers to plate a dish of the chef’s creation for a photograph. Executive Chef Gustard also submitted some of his recipes the producers, and spoke at length about his own philosophy of food. Oliver’s food magazine, Jamie, plans to do a spread on the event in one of their upcoming issues, which will feature Sporting Club menu items presented during Jamie’s Food Revolution.
If you haven't visited our Equestrian Stables lately...you may not know that we have added another 'field of greens'!

You may already be familiar with our Summit Garden, but if you have not visited our Equestrian Stables lately…you may not know that we have added another ‘field of greens’! This particular garden is actually our third one on property at The Greenbrier Sporting Club. In addition to this new one and the Summit garden…we also have a small garden located next to the main Lodge.

The culinary, equestrian and maintenance teams, along with the help of Dave Burhman (our local astronomer), all pitched in to create the new Stable Garden. It is providing both restaurants at The Lodge and The Summit Lodge with fresh, locally grown vegetables. While it will not produce enough to completely satisfy our needs for the year, it will add an extra value to the food that we produce.

Having the ability to label the menus at our Clubs with such terms as Lodge Garden, Summit Garden or Stable Garden gives our servers and chefs a sense of pride when offering & creating meals for our members with locally grown produce. Our members and guests can take comfort in knowing that we are going the extra mile to deliver them the best dining experience possible and ensure that each plate served has the freshest product available.

Current items in the Stable Garden include: Turnips, Swiss Chard, Cauliflower, Broccoli, Purple Scallions, Red Cipollini Onions, Russian Kale, Kohlrabi, Baby Beets, Mixed Lettuce, Bok Choy, Sugar Snap Peas, Eggplant, Squash, Zucchini and a variety of tomatoes.

When you’re in next time, stop by our Equestrian Stables, as well as The Summit Lodge and The Main Lodge to see how our gardens are growing. Don’t miss the Lodge Garden; its located right off from the Lodge headed towards the Sports Complex. The Lodge Garden has mainly baby lettuces, with a small variety of other veggies. The baby lettuces flourish here and look wonderful! We have been using them for a while and have reduced our need to buy from an outside source for 2-3 months now.

We know that growing & buying produce locally is a way to cut our carbon footprint, support our local communities and most of all feel good in knowing that our members are getting the best possible service each and every time they step in for a delicious meal!
